2022 Cabernet Sauvignon

Tasting Notes:

Franciscan Estate 2022 Cabernet Sauvignon is a full-bodied wine grown in California. A deep ruby color shows in the glass with aromas of blackberry and toasted coconut. The mouthfeel is silken with layers of black cherry and dark raspberries with ribbons of caramel throughout. On the finish, notes of dark berry are accented with hints of mocha.

Charred Filet, Eggplant Parmesan, Bacon-Wrapped Dates.


Winemaking Notes:

For this wine, we let the fruit hang on the vine as long as possible to achieve the ripest flavor concentration. We destemmed the grapes and lightly crushed them to break the berries open. We cold soaked the juice for three days to extract as much tannins as possible. The wine was then fermented on skins before being pressed. We aged the wine on American and French oak for 4-6 months.

Viticultural Notes:

The 2022 growing season experienced rain in the early winter months, which quenched parched soil from the drought. Mild conditions persisted throughout the season before September produced heat spikes that hastened harvest. Harvest 2022 produced slightly less yields of fruit with optimal acidity and flavor characteristics.
